TH stands for Thailand, isn't it? Why just the Thai version available for it, yet Chinese language?

Yes after you create a character (you can have multiple) you will see your main screen. To the bottom right is the setting Tab. Click it. Then the tab on the left , 2nd to the bottom. “Languages”.

It depends what sever you choose. The newer server have fewer ppl. Your server also merged into others over times. There’s many ppl on my server.
